Chipotle Meatloaf

Chipotle Meatloaf and Red Smashed Potatoes.

      Recently the hubby and I experimented with a smoked meatloaf. He saw the idea on TV and we had to give it a try. One of my favorite things about that test was the flavor the chipotle peppers gave to the dish. It was smoky with just a little hint of heat.
     For this meatloaf, I didn't want to go through all the steps for a smoked meatloaf, so I added some of those flavors and cooked it in the oven the regular way. Except for the concentrated smoke flavor, this was just as good and much easier.


Chipotle Meatloaf
2 lbs. ground beef
3 chipotle peppers with Adobo sauce, diced
1/8 cup green bell pepper, diced fine
1/4 cup onion, diced fine
3 cloves garlic, chopped
sprinkle, about 2 T. Worcestershire sauce
1/4 cup BBQ sauce
1 tsp. salt
1/2 tsp. pepper
2 heaping T. mayonnaise (I was out of eggs)
4 bread heels, torn into small cubes
1 tsp. paprika
3 slices bacon

Mix ground beef with peppers, onion and garlic just to combine. Add spices, Worcestershire, BBQ, mayo and torn bread cubes. Mix well. Shape into loaf. Place bacon on top. 


Spray coat 13x9x2 inch pan. Heat oven to
350 degrees. Cook 45 minutes and drain. Return to oven and cook additional 30-45 minutes. 
Serves 4-5.
