Pork Cutlet and Gravy

     One of my favorite quick meals is pork cutlets. They are cheap, cook quick and easily pick up whatever flavor you want. Simmering them in gravy insures tenderness. I've found a new spice rub that pairs perfectly with pork. A friend of the hubby's is a competition cooker on the BBQ circuit and has developed his own spice rub. It works great with the pork cutlets to bring out the flavor without over powering the dish.

Pork Cutlet and Gravy
3 pork cutlets
1 T. vegetable oil
1 T. Old Man Larry's Spice Rub (or your favorite dry rub)
1 tsp. black pepper
1 can brown gravy OR 2 T. flour and 1/2 cup water or beef broth

In medium skillet, heat oil. Sprinkle both sides of cutlets with spices. Cook meat 4-6 minutes on each side until browned.

Add one can gravy to pan and simmer on low 20-30 minutes.


To make your own gravy - Remove from meat skillet and sprinkle flour over drippings. Stir well to combine. Add 1/4-1/2 cup water or beef broth and mix well.

Return meat to pan and simmer on low 20-30 minutes.

Serves 3. Recipe easily doubled.
