Deep Fried Bacon

      Is there anything that sounds more outrageous that deep fried bacon? Well, maybe, but this was one that I just had to try. The girls came over for cards one night and we all brought a dish with bacon. One of my friends had her "significant other" deep fry some bacon for us. What a treat! I was so surprised at how easy this is to do.

Ingredients -
3 Eggs
1/2 cup milk
1 lb. thick sliced bacon, cut in half
3 cups flour
salt and pepper to taste
2 cups vegetable oil for frying

Preparation -
Whisk together eggs and milk in a bowl until smooth. Separate bacon strips and soak in milk mixture for 30 minutes.

Preheat oven 350 degrees. Heat oil in deep skillet 375 degrees hot.

Whisk together the flour, salt and pepper in a separate bowl.   

Remove the bacon from the egg mixture and toss with the flour mix to coat.  Line a baking sheet with aluminum foil.

Fry the bacon strips 3 – 5 slices a time until golden brown, about 4 minutes. Drain on paper towel lined plate. Once all of the bacon has cooked, place onto prepared baking sheet and bake about 5-7 minutes until crisp.
