Bugs Bunny is not the only one who likes carrots. My husband has even been known to order them in restaurants on occasion. I think dressing them up a little is a nice change of pace. While the kids like them dipped in ranch dressing, we prefer the adult version, glazed in bourbon. Why not have a little kick with your veggies?
Bourbon Glazed Carrots
20-24 baby carrots, cut in half, quarters if desired
2 T. butter
1/3 cup brown sugar
1/4 cup bourbon
salt and pepper
In small skillet saute' carrots in 1 T. butter for about 5 minutes. Remove carrots from pan.
Add bourbon bring to boil and let reduce a few minutes. Add remaining 1 T. butter and then brown sugar, stirring.
Return carrots to pan and simmer 5 minutes uncovered until carrots are tender and glaze has thickened. Add salt and pepper to taste. Cover until ready to serve. Serves 3.
