Grilled Onion

Onion just off the grill.
My husband showed me this trick years ago. It's such an easy way to come up with a quick side dish. Everyone has an onion handy. When you coat it in butter and add some beef base, you have a tender, flavorful extra that can really top off a meal. This side dish goes well with steaks, chops or as a topping for burgers and brats. Versatility is sometimes a great thing and it's so very easy to do.

Grilled Onion
1 large vidalia onion
1 cube (or tsp.) beef bouillon
2 T. butter
Simple ingredients.
sprinkle of salt and pepper

Peel onion and place in center of heavy aluminum foil square. Core onion.

Put bouillon in center and place butter on top (or down sides of onion). Sprinkle with a little salt and pepper.

Wrap foil around onion to make a packet or bundle.

Place on medium hot grill (375) for 45 minutes or until tender.

Serves 4.

This can be served as a side or topping for burgers, brats or dogs or as a side dish by itself.

Onion ready for cooking.
