Apple Enchiladas

Apple Enchiladas
1 can apple pie filling 


6 burrito size flour tortillas 

1 teaspoon ground cinnamon 

1/2 cup butter 

1/2 cup brown sugar 

1/4 cup white sugar

1/2 cup water 

1/2 cup shredded cheese (I used a the Mexican Melt) (optional)

Spray a 10 x 10 pan lightly with cooking spray. Microwave the tortillas for 15 – 30 seconds so they are softer. Spoon about a heaping 1/4 cup of pie filling onto the tortilla and wrap them up, tucking in the edges. Put the tortillas seam side down in the pan.


Melt butter in a sauce pan. Add both sugars, water, and cinnamon. Bring to a boil and then boil for 4 minutes stirring constantly. Pour over tortillas. Let stand for 45 minutes so the that the tortilla can soak up a lot of the liquid.


Sprinkle cheese over the top. (optional)


Bake at 350 degrees for 20 minutes or until golden.


Serve with a bit of the sauce drizzled over the top. Vanilla ice cream would be good! 


Note: You could also do this with peach pie filling. I didn’t have any pie filling but had a jar of apples from Cracker Barrel. That is what I used. You could also make your own filling out of fried fresh apples.
