Taco Cups

   Over the years, we have become friends with other couples, who like us, have an interest in food - whether it's cooking it, or in some hubby's view, eating it. We share recipes, techniques and restaurant experiences - it's a fun common topic.
   One of the recipes I've borrowed over the years is for BBQ cups. You make a little nest out of refrigerator biscuits in a muffin tin, top with filling, cheese and bake. Sometimes simple is very good. I took the basic recipe and switched it up for Mexican flavors. That  hit it off with the friends and family. These little things can be made ahead and reheated later. They travel well, too. Recipe doubles easily.

TACO CUPS
1 lb. ground beef
1 pkg. taco seasoning
1 pkg. refrigerator biscuits
shredded cheese for topping

1. Brown ground beef. Drain.
2. Make taco meat according to seasoning directions.
3. Spray muffin tin with cooking spray.
4. Put biscuits in muffin cups. (If using large biscuits like “Grands,” split in half)
5. Spoon meat in muffin tins and top with shredded cheese.
6. Bake according to biscuit directions. Cool slightly.
Serves 4-6

For a complete meal serve 2 or 3 of these per person and have Taco Salad on the side.
