There are two holidays that my hubby and I do up right - Memorial Day and Thanksgiving. The whole shibang - the door is open for food and friends, all are invited. The kids have taken to this, too, passing words to their friends to drop by - mom is cooking.
Memorial Day is the official beginning of summer grilling and remembering special ones no longer with us. Turkey day we'll visit later in detail, but for now, it's summer.
Here was our menu this memorial day - regular burgers, taco burgers, brats, regular hot dogs and in memory of my father-in-law, we do some Nathan's hot dogs. (On a whim after hearing about the annual hot dog eating contest at Coney Island, NY, where these all beef dogs are made, I found them on sale and we gave them a go - loved them! Best dog we ever ate. My father-in-law who is a grazer - nibbling on this and that, snagged a dog and gave it a big thumbs up.) This is what hubby does on the grill.
I start the day before and make my version potato salad, slaw, veggie dip, fruit salad, homemade bacon mac and cheese, baked beans, and deviled eggs. Corn on the cob always gets done at the last minute. This year's favorite turned out to be a new version of German potato salad. You know it's good when friends ask for the recipe. So here's what I did -
Vidalia Onion Potato Salad
5-6 med. potatoes boiled n salt water & peeled.
4-6 slices bacon cut in 1 in. pieces & cooked & crumbled
1/4 - 1/3 cup ea. of diced red & green peppers.
1/2 med. vidalia onion sliced thin
1 clove garlic minced
sprinkle of crushed red pepper flakes.
1/2 cup Virginia Brand vidalia onion vinegarette (give or take)
3 T. chives
2T. chopped Ital. flat leaf parsley (regular dry is OK too)
1/4-1/2 t. oregano
fresh cracked black pepper & coarse sea salt
Boil potatoes in skin in salted water til just tender. Cool. They're easier to peel & dice in cubes when cold. Cook bacon pieces til done. Set aside to drain, keeping grease. Over med. heat saute' onion, peppers in bacon grease til tender then add garlic & pepper flakes & cook just a few minutes more til the smell starts to catch you. Remove fr. stove. Pour sauted veggies over cubed potatoes. Mix dressing, spices, crumbled bacon and potatoes. Let chill for 30 min. or serve warm.
