Friday Night Subs

Friday night is easy night. It's either leftovers, pizza delivery, or something really simple. After working all week (with some late nights thrown in), me and hubby have our once-a-week date night, go to the Moose, see our friends, and have a few beers. You'd be surprised at how much recipe swapping we do there. We came home the other week, and this is what I threw together (what was on hand). Some tater tots were tossed in the oven, while the sandwiches were getting warm and gooey, and we had a meal. Sometimes simple is good and just what you need after a long work week.

Friday Night Subs
2 hoagie rolls
4 slices salami
8 slices thin sliced ham
16 slices pepperoni
4 slices American cheese
4 slices Swiss cheese
4 slices pepperjack cheese
shredded mozzarella cheese
1/4 lb. shredded pastrami
sliced onion
spicy mustard

Split buns and put in hot oven - 450 for 5 min. just to lightly toast. Remove from oven and let cool just enough to handle. (Turn oven off.) Spread mustard on bread. Layer Swiss cheese, ham, American, pastrami, onion, pepperjack, ending with pepperoni. Melt in warm oven 10 minutes.

Nice thing about this is you can use whatever meats and cheeses or even buns you have on hand. The buns have just a slight crunch and the cheese gets all melted and gooey.
