Eva's Derby Pie

My friend Eva has an incredible sweet tooth. She makes desserts and has even won the annual Clarion Holiday recipe contest. She passed this recipe to me, and I just have to pass it on to you.
Apparently the name "Derby Pie" is a trademark of Kern's Kitchen in Kentucky and was created in 1950 at the Melrose Inn as a specialty pastry. This version is a little different - pecans instead of walnuts, and no Kentucky Bourbon. But it's simple, rich and good.

Eva's Derby Pie
1 stick melted butter
1 cup sugar
1 cup white corn syrup
1 t. vanilla
1 cup pecans, chopped
1/2 cup chocolate chips
1-8 inch unbaked pie shell

Preparation -
Mix butter, sugar, corn syrup, vanilla, stirring until smooth. Add pecans and chocolate chips. Stirring until blended. Pour into pie shell and bake for 45 minutes at 350. (note - if using 9 inch shell, bake for 1 hour)
