Strawberry Pie

   The three things I remember most about going to the big town of Evansville when I was a little girl is the circus, ordering a bologna sandwich at Mac's BBQ and the strawberry pie at the Farmer's Daughter Restaurant. So when my friend from Mt. Carmel, Barb, passed me this recipe for Strawberry Pie, the Farmer's Daughter came to mind. It's the real homemade deal and just delicious.

Strawberry Glaze Pie
1 qt. fresh strawberries
1 cup sugar
red food coloring
3 T. cornstarch
1 cup water
2- 9 inch baked pie crust
whipped cream

Preparation -Wash and hull strawberries. Cut up one cup berries. 

Mix sugar and cornstarch in 2 qt. pan. Stir in water gradually until smooth. Add cut up berries (1 cup). Cook and stir over medium heat until thick and clear. Stir in food coloring.

Cool. Stir in remaining berries, saving 1/4 cup for garnish. Pour into pie crusts. 

Chill about 3 hours. Top with whipped cream and garnish with remaining berries. Makes 2 pies.
