The other night was one of those nights where I looked in the kitchen and did a survey of what I had to work with - and didn't come up with much. The only ground meat I had was hot sausage so that's what I used to make chili. If you like it exciting, this is the one for you. It's not tear-jerker hot, but has a definite wake up call.
Spicy Sausage Chili
1 lb. hot sausage, cooked and drained
1/2 cup minced onion
1 can hot chili beans
1 can diced tomatoes w/jalepenos
1-8 oz. can tomato paste
1 T. chili powder
1 t. cumin
1 t. paprika
1/2 t. crushed red pepper
2 T. Country Bob's Steak sauce
1/2--3/4 cup water, depending on thickness desired
toppings - diced onion, shredded cheese or tomato chunks
Preparation -
Combine all ingredients in crockpot, except water. Stir to combine and add as much water as needed. Cook on low 7-8 hours. Good topped with shredded Cheddar cheese. Serves 8.
