Jello Cake

My favorite cake has always been Jello Cake. That's what I requested each year for my birthday as a kid. It's simple, doesn't require a lot of ingredients or foo-foo. There also quite a few variations.

Jello Cake
1 pkg. white cake mix
  (eggs, oil and water as directed on package)
2-4oz. pkg. strawberry gelatin
2 cups boiling water
1-8 oz. pkg. whipped topping

Bake cake as directed for 13x9x2 baking dish. Let cool and then pierce cake with fork at 1/2 inch intervals.
Stir boiling water into gelatin, stirring well until completely dissolved. Pour gelatin over cake and refrigerate for at least 3 hours. Top with whipped topping and refrigerate one hour until ready to serve. Store leftovers in refrigerator.

*Note-this can be made as a layer cake (shown above). Bake in 2-9 inch round cake pan. Pour gelatin over cakes and refrigerate 3 hours. Dip one of cake pans in warm water 10 seconds and carefully unmold cake to a serving plate. Spread with about 1 cup whipped topping. Dip and unmold second layer and place on first cake. Spread whipped topping on sides and top of cake. Refrigerate 1 hour or until ready to serve.
