Savory Sweet Potatoes

Ipomoea batatas, Convolvulaceae, Sweet Potato,...Image via Wikipedia
I tried a new twist on a Thanksgiving classic this year, Savory Sweet Potatoes. They are normally candied and sweet is added on to sweet. Well, I like sweet potatoes, but not so much sweet. So this year I tried a new twist and added some cumin for a hint of smoke and bacon for some meat and salt. It's like making regular mashed potatoes with the extras, only using sweet potatoes. It got some "thumbs up" from my crowd. My hubby is not a big fan of sweet potatoes, but he says, with this dish, I'm converting him.

Savory Sweet Potatoes
2 large sweet potatoes
1/4 cup diced onion
2 T. butter or margarine
1/4 cup milk
1 t. cumin
1/4 t. salt
1/8 t. white pepper (black is OK)
3-4 slices cooked crumbled bacon

Peel sweet potatoes and cut into 2 inch cubes. Put sweet potatoes in medium saucepan with 1/4 cup water and boil until tender (about 20 minutes).
Remove from heat and add butter and milk. Mix with electric mixer on medium until well blended. Add spices and mix on high until smooth (just a few minutes). Stir in bacon bits and serve warm. Serves 6.
