New Red Potatoes with Chives

    I remember going to the farmer's market or local produce store and seeing new red potatoes, grabbing some because they were fresh, local and cheap, and then thinking, "What should I do with these?"
    Believe me, a lot of us do that - buy something either because it's on special or because it just looks so good we hate to pass it up. But there in lies the problem, what to do? 
   This idea is great for a beginner cook, or if you just need an easy fix for a side dish. It's simple and taste great.

New Red Potatoes with Chives
6-8 medium small new red potatoes
1 T. butter or margarine
2 fresh chives, diced (or 1T. dried chives)
salt and pepper to taste

Carefully wash potatoes and put in medium saucepan covered by at least an inch of cold water. Bring to boil on high heat for 30 minutes or so, until fork tender. Drain water. Keep potatoes warm in original pan.

Add butter, salt, pepper and chives. Stir to coat potatoes and split (smash) larger potatoes in half (or bits) with spoon. Cover to let butter melt and flavors absorb. Serves 4.
(Note-sprinkle with Parmesan before serving for a nice touch.)
