Pepper and Tomato Relish

Pepper and Tomato Relish

2 Tablespoon of EVOO (extra virgin olive oil)
3 garlic cloves, diced
1 Onion, diced
2 red bell peppers, diced
2 Bay leaves
2 Tomatoes, diced
1 Cup ketchup
1 Tablespoon parsley
1 Tablespoon Worcestershire sauce

Saute garlic, onions, red bell peppers and tomatoes till soft. Add remaining ingredients and simmer for 10 minutes.  Remove bay leaves.

This can be served on almost any meat.  Makes a great meatloaf.
