Cheese Stuffed Meatballs

   Meatball subs are one of my favorite messy foods. Recently I had some leftover string cheese from another experiment and decided to see if I could stuff the meatballs with cheese. The taste was really good with an Italian flare. The meatballs were just a little small, so that three fit perfectly in a hotdog bun (I was out of hoagie buns). They are fine by themselves, but a little marinara sauce on top really makes it good. The kids gave these a thumbs up, but the hubby said next time make them bigger - more meat! Surprise, surprise!


Cheese Stuffed Meatballs
1 lb. ground beef
2 tsp. oregano
1/2 cup bread crumbs
1/4 cup finely diced onion
1/4 tsp. rosemary
1/4 tsp. basil
1 tsp. garlic powder
salt and pepper
2 pieces string cheese cut in 1/6 to make 12 pieces

   In medium mixing bowl combine all ingredients except cheese. Shape into 12 1-inch balls about the size of a golf ball. Insert small piece of cheese into center of each meatball and reshape meatball. Place on sprayed baking pan.
   Bake in preheated 350 oven for 10 minutes. Remove from oven and let cool for 10-15 minutes. Return to oven for additional 10-15 minutes.
   Meatballs can be put in Marinara sauce or on hotdog or hoagie bun plain or topped with Marinara. Makes 12 meatballs.
(I would recommend making a double batch and freezing some for later use.)
