Garlic Meatloaf

   Have you ever had one of those creative ideas where a food experiment actually worked? Well not only worked, but where you just nailed it? Happy dance time!
   Once, I actually did this. I made meatloaf with garlic flavored meat and it was the best meatloaf I ever made. Unfortunately, Lilly, our dog totally agreed  - she ate it!

Garlic Meatloaf
2 lb. ground sausage
1 egg
4 cloves chopped garlic
1/4 cup chopped onion
2 bread heels, torn into small bits
1/4 cup chopped peppers
1 T. Worcestershire sauce
1 T. parsley
salt and pepper
1 tsp. paprika
3 slices bacon

Preparation-
Day before, mix chopped garlic into meat and refrigerate overnight. Preheat oven to 350 and combine all ingredients except bacon. Spray casserole with cooking spray and shape meatloaf. Lay bacon on top and cook 45 min. Drain off any fat and return to oven for half an hour more. Serves 6-8.
Note-sometimes I make this ahead of time. Cook meatloaf half way and finish the next day.
