Bacon BBQ Meatloaf

Meatloaf covered in bacon ready for oven. 
   Doesn't just about everybody like meatloaf? Looking for a new way to spice up this old standby? Why not add BBQ and top it with bacon? This is my latest twist on a basic meatloaf, mix some BBQ sauce right into the meat for flavor and moisture and then use it on top instead of ketchup. Strips of bacon layered on top complete this meaty mound of goodness.


Bacon BBQ Meatloaf
1-1/2 lb. ground beef
1 egg
1 bread heal
1 tsp. paprika
1 T. parsley
1/2 tsp. onion powder
1 T. minced garlic
salt and pepper
2 T. Worcestershire
2 shakes liquid smoke (easy does it)
1/3 cup x 2 BBQ sauce
3 slices bacon

   In large bowl, combine egg, meat, and bread heal that's been torn into bits. Add spices, Worcestershire and 1/3 cup of BBQ sauce, plus liquid smoke. Mix well.

   Turn into sprayed 11x7x2 inch glass baking pan. Shape into loaf. Spread remaining 1/3 cup of BBQ sauce over top of meat. Lay strips of bacon over top. 

   Bake in 350 oven for 45 minutes, remove from oven and drain grease. Return to oven for 20-25 minutes. Remove from oven and let cool 10 minutes or so before serving. Serves 4-5.
