Pecan Pie

A slice of pecan pieImage via Wikipedia
If someone were to ask what's my favorite pie, I'd have to say pecan. I've always loved the crunch of nuts and the rich gooey filling. I can remember traveling through the south with my parents and slices of pecan pie were readily available.
My friend from work snagged her mom's pecan pie recipe for me to try. I can't wait. Here's to sharing a classic.

3 eggs, lightly beaten
1 cup white Karo syrup
1 cup sugar
2 T. butter, melted
1 tsp. vanilla
1-1/2 cups chopped pecans
Mix all and pour into 9-inch deep dish pie shell. Bake at 350 degrees for 50-55 minutes. Always sit on a cookie sheet for easy in-and-out of the oven and to catch any spills.
