Chili Cheeseburger Pie

   Looking for something easy to throw in the oven for dinner while you're busy doing other things? This casserole takes ground meat, a few veggies, baking mix, cheese and spices to turn into a meal. It's just the kind of thing I throw together at the end of the work week when it's almost time for a trip to the grocery store.

Chili Cheeseburger Pie
1 Lb. ground beef
1/2 onion, diced (3/4 cup)
1 small green bell pepper, chopped
2 cloves garlic, chopped
salt and pepper
sprinkle of crushed red pepper
2 T. chili powder, divided
1/2 tsp. cumin
1/2 tsp. paprika
1/4 cup ketchup
splash of Worcestershire sauce
2 T. water, if needed to combine ingredients
3 eggs
2 cups Bisquick
1/2 pkg. (8 oz.) shredded cheese (Mexican or Pepperjack)
*additional toppings - 2 T. chopped green chilies or 1/2 cup crumbled bacon (2-3 slices cooked).

   Brown ground beef until about half way done and then add onion, green pepper, salt and pepper. Stir often. When onion and peppers are beginning to soften (3-4 minutes) add garlic and crushed red pepper. Stir to combine, cooking until meat is done, just 3-4 minutes more. Set aside and cool for a few minutes and then drain excess grease. Add ketchup, spices, Worcestershire sauce and water if needed.
Spray 13x9x2 baking dish. Preheat oven to 350 degrees.
   In small bowl combine eggs, Bisquick, chili powder and any additional toppings, mixing until moist and no lumps. Layer meat, shredded cheese and then batter in baking dish.
   Bake in 350 degree oven for 45 minutes to 1 hour. Top should be golden, but not overly brown. Let set for 5 minutes or so and then cut in 8 rectangles.
