Freezing Peppers

   Peppers are one of those foods you can quickly freeze raw without blanching them first. Thawed, raw peppers can be used in cooked or uncooked dishes.

Bell or Sweet Peppers
   Wash peppers. Remove stems, seeds and membranes. Use the the tip of a spoon to make it easier.
   Cut peppers into strips or dice. Freeze peppers in a single layer on a cookie sheet for about an hour until frozen. This is often called "tray freezing."
   Transfer to a "freezer" bag, sealing well to leave out as much air as possible. The peppers will remain separated for recipes.

Hot Peppers (including Jalapeno Peppers)
   Wash and stem hot peppers. 
   Put in plastic bag, leaving no airspace. Seal and freeze. 
   It is not necessary to cut or chop hot peppers before freezing.
