Rum Balls

   Once the holidays get going at work, we often bring in samples for our friends and coworkers to try. It's always fun tasting others baked goodies. 
  One of the girls at work brings in some fun in the form of rum balls. She donated these to a fund raiser one time and we had to set them aside for the adults so some child didn't mistakenly get one. What a hoot. But I've got to say, the adults like them just fine. She was nice enough to share them with me, so I thought I'd share some holiday spirit with you.

Rum Balls
In large bowl combine:


1- 3/4 cup fine vanilla wafer crumbs

1 cup finely chopped pecans

1 cup confectioners’ sugar
1/8 tsp. salt

2 T. cocoa

In small bowl combine:


1/3 cup rum or 1 tsp. rum extract and water

1 T. instant tea

2 T. dark corn syrup

Slowly stir rum mixture into crumb mixture. Form into one-inch balls and roll in confectioners’ sugar. Store in tightly covered metal container overnight to blend flavors.

Note: rum balls can also be dipped in chocolate bark.
