Chicken Salad

Friends Favorite Recipe Swap

I just made a batch of my Chicken Salad and thought you might be interested. This is the recipe I used at a coffee shop that I worked at in Bowling Green. It's THE BEST.

Chicken Salad
3 chicken breasts, boiled and hand pulled

1 apple


1/2 lg. box raisins

3 ribs celery

sweet pickle relish

black pepper

Boil 3 chicken breasts. While it's in the pot cut up the apple and 3 sticks of celery and add the rest of the dry ingredients (no mayo yet) in a big bowl. (I use a lot of raisins -- about 1/2 of a big box). When the chicken is done and cooled down hand shred it into the bowl and add mayo until it's creamy. Mix it up! 

It's simple and awesome and a little bit sweet. The more pepper you use the less sweet it gets. That recipe is enough for a HUGE batch. You can pare this down as needed.
