Fried Green Tomatoes
3 medium green tomatoes, sliced thin
1 egg
1 tsp. lemon juice
1/4 cup Panko crumbs
1/4 cup cornmeal (or flour)
1/2 tsp. each salt and pepper
1/2 cup vegetable oil
In medium skillet, heat oil over medium heat.
Put egg in small bowl and beat lightly. Add milk and lemon juice.
Stir to combine.
In shallow pan or dish, blend Panko crumbs and salt and pepper.
Dip sliced of tomato into egg/milk mixture and let excess drip.
Coat in bread crumbs.
Fry 3-4 minutes each side until lightly browned. Drain on paper
towel lined plate and sprinkle lightly with salt.
Serves 4.
