On the Friday after Thanksgiving who feels like cooking? So last night I took the easy way, using holiday foods we had on hand and gave turkey a new look and flavor.Turkey Club Sandwich
1 loaf Italian bread
6-8 slices turkey
Roasted garlic Ranch dip*
8 slices cooked bacon
6 slices pepper jack cheese
6-8 pieces shaved pastrami
Preheat oven to 350. Spray small cookie sheet. Cut bread in half, then stand on end and slice lengthwise. Lay open like a book and spread both sides of bread with garlic dip. On one side of bread layer turkey, cheese, pastrami and bacon. Put other half of bread on top. Bake 15-20 minutes or until cheese is melted. Let rest for a few minutes and then slice into 4-6 pieces.
*Roasted garlic Ranch dip. We've found this in grocery stores, but you could make yourself by using a thick Ranch dip, like Hidden Valley, adding roasted garlic and mixing well.
Tip-while sandwich is warming in oven, put small skillet on top to press like a panini.
