German Potato Salad

  Potato salad has been a staple take-along side dish to many cookouts, socials, and family gatherings. The varieties are many. One that is especially good in the summer is a German potato salad. Without the mayonnaise base there is less to worry about with the heat.
  Bacon is a huge plus in this version, well for that matter, all the styles of potato salad that I make have bacon. I can't help it. This recipe is one that I've had since my kids were little. I'm sure there are other variations, this one just works for me.

German Potato Salad
12 slices bacon
1/2 cup chopped green pepper
8 large potatoes, cooked, peeled and sliced
6 green onions, chopped with tops
1/3 cup cider vinegar
1 egg
2 tsp. brown sugar
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. dry mustard

   Cook, peel and slice potatoes. Return to pot off heat and cover to keep warm while bacon cooks. Fry bacon until crisp. Drain bacon on paper towel and crumble. Reserve 1/4 cup of drippings.
    In large bowl mix potatoes, green pepper, onion and bacon. In a small bowl prepare dressing by mixing together egg, vinegar, brown sugar, pepper, salt, mustard and reserved bacon drippings. Pour mixture into a small skillet and cook over low heat, stirring constantly until thickened. Pour over potatoes and toss to coat. Serves 6-8.
