Turkey Pepper Chili

Turkey Pepper Chili straight up.
   We love chili and it's always fun to try it a new way. After finding ground turkey on sale and reading about a New Mexico chili called Green Chili Stew, I decided to combine the ideas. Instead of using pork shoulder and potatoes, I went with ground turkey and chick peas. Don't worry, there's plenty of peppers for flavor.
   My husband decided to take it a step further and plate it with tortilla "scoops" under the soup and topped it with shredded cheese. It was actually good and reminded me of tortilla soup. Here's a healthy low cal dish full of flavor.

Turkey Pepper Chili
1 lb. ground turkey
1 each green, red and yellow bell pepper, chopped
1 small onion, chopped
3 cloves garlic, diced
1/2 cup jalapenoes, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. crushed red pepper flakes
1/2 can diced green chilies
1 can garbanzo beans (chick peas), drained
1 can white hominy, drained
4 cups chicken broth
2 tsp. cumin
1 tsp. cilantro

In large skillet, brown turkey until almost done. Add peppers, onion, garlic and jalapenoes, stirring well. Sprinkle with salt, pepper and pepper flakes. Cook 5-7 minutes more until veggies are softened.


Transfer to slow cooker and add all remaining ingredients. Cook on low 8-10 hours. (On stove top, simmer for 2-3 hours.) Serves at least 6.
