Bacon - Cauliflower Salad

     What makes cauliflower better? Well bacon, of course. This simple salad with only four ingredients is made right in the bowl the night before. An easy homemade dressing is poured over the top and you've got a perfect summer side that feeds nearly a dozen.

1 head lettuce

1/2 head cauliflower
1 onion
1 lb. bacon, fried and diced
1/4 cup sugar

1 cup mayonnaise
1/3 cup Parmesan cheese
Salt and pepper to taste


Prepare salad the night before serving, using a large bowl that can be tightly covered.


Break up lettuce and cauliflower into bite size pieces. Slice onion and separate into rings.

Layer ingredients in this order; lettuce, onion, bacon and cauliflower. Combine sugar, mayonnaise and cheese and spread on top. Cover tightly. 

After chilling overnight, mix well before serving. Serves 10.
